If you do not have a pellet grill or smoker, you can enjoy this recipe by following the same instructions and cooking it in your oven. It won't have the smoke flavor, but it will still be just as delicious!

This recipe feeds 10-12 people. If cooking for a lesser amount of people, cut the recipe’s ingredients in half and follow the same instructions.
Ingredients:
- 24 oz penne pasta
- 3 Cups Heavy Whipping Cream
- 1-1/2 Cups Whole Milk
- 1/2 Stick of Butter, Salted (4 Tbsp)
- 2 Cups Shredded Gouda
- 3 Cups Shredded Sharp Cheddar
- 3 Cups Shredded Colby Jack
- 8 oz Cream Cheese
- 2 Cups Ricotta Cheese
- 2 Tbsp Gonflayed Steak Seasoning & Rub
- 3/4 Tsp Salt (to taste)
- 9"x12"x3" Aluminum Pan
Instructions:
- Pre-heat your pit (or oven) to 350F.
- In a large pot, bring water to a boil. Add the pasta and cook until slightly al dente then drain.
- In the aluminum pan, combine the cooked pasta with the above ingredients (save 1 Cup of Sharp Cheddar & 1 Cup of Colby Jack to the side to sprinkle on top later).
- Cover the pan tightly with aluminum foil and place on the pit or in the oven. Bake for 1 hour without opening.
- After 1 hour, stir the mixture, re-cover, and continue baking for an additional 30 minutes, or until the cheeses have melted and the mixture is well combined.
- Remove the foil, set the oven to high broil, sprinkle on the remaining cheese, and broil for 5 minutes, or until the cheese is golden brown. Watch closely to prevent burning.
- Remove from oven or pit and let cool slightly before serving.
